Blueberry Dinette Cake with Streusel topping


In our house, we always have to have a dessert with dinner. So for today's, we made a Blueberry Dinette Cake with Streusel topping. It's the first time my mom and I tried this, and I have to say, it is really good. Not only does it taste amazing, but it is the easiest recipe you will ever make, you can't go wrong with this cake. Here's what you'll need.........


1 1/4 cup all purpose flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
3/4 cup milk
1/3 cup of shortening or margarine (we used margarine) 
1 egg
1 tsp vanilla extract 






Preheat oven to 350°F. Grease and flour 9 inch square pan. Beat all ingredients in a large bowl on low speed, scraping sides of bowl constantly for 30 seconds. Beat on high speed, scraping bowl occasionally for 3 minutes.


You need 2 1/2 to 3 cups of blueberries to put on the bottom of your pan. We used fresh, but if you want to use frozen make they are thawed and strained.


Now pour blueberries into the pan and spread so the bottom is all covered. Sprinkle a little sugar onto blueberries, very little. Pour batter on top of the blueberries, sorry I forgot to take a picture of it, but just make sure the batter covers the blueberries and that no blueberries pop out of the batter.


Time for the Streusel!

3/4 cup of firmly packed brown sugar
1 tsp all purpose flour (which I also forgot to take a picture, but I did add it, don't worry)
1 tbsp butter
1 tsp cinnamon





Combine sugar, flour, and cinnamon in small bowl; stir well to blend. Cut in butter, making sure all is mixed together and has a grainy feel.




Sprinkle Streusel on top of the cake batter, making sure top is fully covered. Bake in the oven for 35 to 40 minutes or until wooden pick, inserted in center, comes out clean.
